Ingredients

½ cup rolled oats (not instant cooking) 

½ cup almond flour or milled almonds or any other nut flour

2 eggs 

1 small banana 

2 teaspoons baking powder 

1 tablespoon of water 

Pinch of salt 

½ teaspoon vanilla extract 

1 teaspoon of cinnamon 

Method 

Blend all the ingredients using a stick blender or food processor.  

Heat 1 teaspoon of olive oil in a non-stick pan. 

Drop spoonfuls of the batter into the pan and then turn off the heat and put the lid on briefly to allow them to steam-fry 

Turn the Flap Jacks over and bake until golden brown on both sides. 

Tip 

Be careful – they burn easily. 

It is better to bake longer over a lower heat. 

Use a dessert spoonful batter to manage the size. If they are too large, it is difficult to turn them over.
